Cheese Ball of Yumminess


Yes, I know that yumminess isn't a real word (though my spell check knows it -- that's just weird), but this cheese ball is amazingly delicious. I got the recipe from a dear friend. She made if for a church social where it was the first thing completely devoured. The pictures show the recipe doubled, which makes quite possibly the biggest cheese ball ever made, so unless you are feeding your congregation, I would recommend doing the amounts listed for a single batch.

Ingredients:
8 oz. pkg cream cheese - softened to room temp
1/4 C mayo
2 C finely cubed ham
1-2 tsp parsley
1 tsp minced onion
1/4 tsp dry mustard
1 C chopped nuts-divided


Combine first 6 ingredients plus 1/2 of the chopped nuts.





Mix well.


Refrigerate for 1-2 hrs. to set up. Remove from fridge, shape into a ball and roll in remaining 1/2 cup chopped nuts.


Serve with your favorite crackers.

Microwave Nachos


Most Sundays, we try to cook as little as possible. It's supposed to be a day of rest, and that means this cook, too. So, as an after-church snack or lunch, we frequently like to make up a quick plate of nachos to share.

Ingredients:
One microwave-save plate
Liberal amounts of corn chips
2 tomatoes, chopped
1/2 C shredded Cheddar cheese
3/4 C (or there abouts) of your favorite salsa or Picante sauce

Spread chips on the plate.


Sprinkle cheese over chips.


Sprinkle tomatoes over cheese.


Pour salsa over everything.


Microwave on high for 1:42 seconds (the timing has been researched and perfected by my husband).


Eat.
