Easy and Delicious Rice Pilaf


We eat a lot of rice. So I was really happy to find this easy rice pilaf recipe. It's delicious and so simple.

Ingredients:
1 C rice, uncooked
2-4 Tbl olive oil
2 C chicken broth
1 Tbl dried thyme
1-1/2 tsp salt

In a medium sauce pan, heat oil. Add the rice and toast on medium high until the corners of the rice are translucent and it has a nice, toasted smell.


Add the broth, thyme, and salt. Reduce the heat to a simmer and cover the pan.


Cook covered for 15-18 minutes. Do not remove the lid to check how it's going. After 15 minutes, you can check, and then check every minute or two after.

Remove from the heat and fluff with a fork. Cover with a clean dishcloth and let stand for a few minutes before serving.


Serve with your favorite entree.

Fried Rice - Bacon-style


The other day I cooked up a pot of rice only to realize that we had potatoes and gravy in the fridge that would go better with the main course (grilled brisket). So we tried to think of what we could do with 4-1/2 cups of cooked rice, and Russ said "Fried rice!" So here it is.

Ingredients:
4-1/2 C cooked rice
1 small onion, diced
1 small green pepper, diced
2 stalks of celery, diced
7-8 strips of bacon, cooked
3 eggs
2 large green onions
soy sauce to taste

In a large frying pan, cook the bacon until crispy. Remove from pan and crumble.


Saute the onions in the bacon grease.


Add eggs and cook. Add green pepper and celery. Add rice and mix all together.


Add soy sauce and blend. Add bacon and green onions.


Heat thoroughly. Serve hot.
