Egg Salad Sandwiches


I know that Easter is long past, but I enjoy a good egg salad sandwich any time of the year.

Ingredients:
1 hard boiled egg
1 Tbl mayonnaise
1 tsp spicy brown mustard
2 baby dill pickles, diced
1 piece whole wheat bread

Peel the egg. In a small bowl, mash the egg. Add mayo and mustard and mix thoroughly. Mix in pickles.

Spread over bread.

Reuchel Sandwiches


A classic Reuben sandwich has corned beef, sauerkraut, Thousand Island dressing, Swiss cheese, and rye bread. A Rachel has a lot of the same stuff, except it's made with pastrami and coleslaw. For the Reuchel, we used pastrami, Thousand Island dressing, Jarlsburg (a type of Swiss cheese), sauerkraut, and white bread. We also threw on some red onion, just for good measure.

Ingredients:
4 slices of bread
Generous amounts of Jarlsburg cheese
Heaps of sauerkraut
Scads of sliced red onion
Mounds of pastrami (about 3 large slices per sandwich)
Thousand Island dressing


To assemble the sandwiches, spread both slices of bread with dressing. Place the other ingredients on the sandwich in any order you want.


Butter the outsides the sandwich. Grill until golden brown.


Eat hot.

Grilled Sancwiches


Love a good panini? They're very easy to make at home, especially if you have a sandwich grill. However, it's not necessary. You can grill sandwiches on the stove, you just won't get the cool grill marks. And they don't make it taste any better, anyway.

Ingredients:
Two slices of bread per sandwich
Dijon mustard
Mayonnaise
Cheese of choice
Meat of choice
Sliced tomato
Butter

Butter one side of each slice of bread.


On the non-buttered side, spread mustard and mayo. The amount you use is up to you.


Place meat, cheese, and tomatoes on mayo/mustard side of bread.


Cover with other slice of bread, butter side out. Place on grill (or in heated frying pan).


Close grill and cook until golden brown. 
 (If using a frying pan, cook until both sides are golden brown.)

Pulled Pork Sandwiches


Tuesdays are a little crazy at our house. My husband picks up the kids from their mom's for dinner, and because Tuesday is my really late night for teaching, starts making dinner around 6:00 or 6:30. The other day, we talked about doing more crock pot meals on Tuesdays to make it easier for everyone. My stepson immediately suggested pulled pork sandwiches. Sounded good to us.

Ingredients:
6 buns
2-3 lb. pork loin roast
16-oz. barbecue sauce
salt & pepper to taste

Put the roast in your crock pot and season with salt and pepper. Cover with barbecue sauce. Cook on low for 8 hours. Stir with fork to break up meat until it's as chunky or pulled as you want. Cook for additional 2 hours so the flavor gets all through the meat.


Serve on buns.

Braided Rosemary Bewitchment


I got the idea for this from Jamie Cooks It Up! I started with the rosemary bread recipe and went from there. Next time, we'll try pastrami and Swiss cheese.

Ingredients:
1 batch rosemary bread
1 Tbl melted butter
sliced turkey
sliced medium cheddar cheese
1 Tbl rosemary
grated Parmesan cheese

Prepare the bread up through the first rise.

Spread parchment paper out large enough for your loaf. Lightly grease the paper. On the paper, roll out the dough in a long rectangle.


Using a pizza cutter, cut one inch wide strips along both long sides of the rectangle, leaving about a gap down the center uncut for your filling.


Place the turkey and cheese down the center of the dough.


Over lap the dough strips in the center over the top of your fillings.


Place the braid (with parchment paper) on a cookie sheet and allow to rise in a warm place for an hour.


Preheat oven to 375F.

Melt the butter and brush over the braid.


Sprinkle with rosemary.


Grate Parmesan cheese over the loaf.


Bake for 20-25 minutes. Serve warm.

Easy Turkey Wraps


We've discovered the joys of eating sandwich wraps. Our favorite meats? Turkey and pastrami. And you can put anything on them that you like. We also found a wonderful new Lays potato chip flavor: Sundried Tomato Basil.

Here's our current favorite:

Ingredients:
tortillas
thin-sliced deli turkey meat
thin-sliced Havarti cheese
1/2 large avocado
spicy mustard
lemon pepper

Spread mustard on wrap.


Add meat.


Add cheese.


Add avocado and season to taste with lemon pepper.

Roll.


Eat.

Fun and easy grilled cheese

We love grilled cheese sandwiches, but we couldn't just leave them at plain grilled cheese. So, introducing:

Russell and Nancy's Fun and Easy Grilled Cheesy Sandwiches

Two slices of bread per sandwich (we use homemade)
Slices of cheese (we use Tillamook medium cheddar)
Slices of pastrami
Butter

Assemble your sandwich and butter the outside of both slices of bread. Heat your grilling pan. We use a waffle pan that came with sandwich plates. When cheese is melted and bread is toasted, remove from pan.

Viola! Grilled cheese with a twist. We like them with tomato soup and a healthy veggie on the side. Great for movie night.
