Cheese Ball of Yumminess


Yes, I know that yumminess isn't a real word (though my spell check knows it -- that's just weird), but this cheese ball is amazingly delicious. I got the recipe from a dear friend. She made if for a church social where it was the first thing completely devoured. The pictures show the recipe doubled, which makes quite possibly the biggest cheese ball ever made, so unless you are feeding your congregation, I would recommend doing the amounts listed for a single batch.

Ingredients:
8 oz. pkg cream cheese - softened to room temp
1/4 C mayo
2 C finely cubed ham
1-2 tsp parsley
1 tsp minced onion
1/4 tsp dry mustard
1 C chopped nuts-divided


Combine first 6 ingredients plus 1/2 of the chopped nuts.





Mix well.


Refrigerate for 1-2 hrs. to set up. Remove from fridge, shape into a ball and roll in remaining 1/2 cup chopped nuts.


Serve with your favorite crackers.

Fresh Salsa


Is there anything better than fresh salsa? Can't you just smell the cilantro and chili peppers working together to create such utter joy and happiness? I can. Mostly because I just made some this weekend. And here's how:

Ingredients
2 Anaheim peppers
4 small orange chili peppers
5 roma tomatoes
1 medium onion
As much cilantro as you can handle
2 gloves of fresh minced garlic
Juice of 1 small line
salt & pepper to taste

Remove the stems and seeds of the peppers. You can leave some of the seeds, if you want your salsa to have more kick.


Cut tomatoes and onions into large chunks. Remove the long stem part of the cilantro and cut up some.

Put all ingredients in food processor and chop until it's the consistency you want.

Serve with chips.

Variation:
Cut up a medium avocado and add AFTER you remove from food processor.

Shrimp Dip


This recipe is so easy and so delicious, you won't believe it.

Ingredients:
1 pkg (8 oz) cream cheese, softened
4 Tbs milk or cream
1 tsp lemon juice
1 tsp onion juice
dash Worcestershire sauce
1 can tiny shrimp, drained and chopped


Mix well.



Chill. Eat.
